Hi, I struggle to get any better than 3G signal in my house and very few spots in my town where I get 4G, I now see EE has 5G in Stamford Lincs, why shouldn’t I think about switching providers?

I would just go to whoever offers the best deals, and best coverage, and whoever works for you.
Get a couple of PAYG sims and test the network coverage, and away you go? Just remember 5G struggles to permeate walls as much as 4G if not more, so test 4G and 5G is a nice to have

A good deal is useless if the signal is bad.
Forget the cost and go with whoever gives the best coverage.
