I have just switched to O2, sent in the PAC to O2, the ph was showing no service this morning so I assumed my previous provider had cut my service, number had been ported. I swapped in the O2 sim and I do not have my old number. How do I sort this? Thanks

You will need to contact customer services @Why2 

Call them on 202 or 0344 809 0202 if you were pay monthly, or 4445 or 0344 809 222 if PAYG (or use 0800 032 1402 if you have no other line, and you can use Skype for free - Guide: A Guide to Skype ).

Alternatively you can message on social media:

I have just tried the method set out by Emili T.  - go to settings -Phone -Number and add my number there. Next step is a verification code which didnt come through. I will call as you suggest @gmarkj Thanks

Spoken with 202 support, my number will be ported later today at which time I will change it in Settings, through Phone - my number, and not as I tried through my Apple ID info which couldn't work anyway.
