If I buy the Apple Watch on pay monthly as a Christmas gift for my partner does his iPhone also need to be on o2, as he is currently on virgin.

Yes it will only work with O2 contracts and will be sync'd with yours if you buy it.

Best to buy directly from Apple on instalments in this case.

Buy from Apple if a gift

They do monthly payments too
