My mum was given a handset last Christmas, and a SIM only rolling contract; £10 a month. She's never used the phone and I doubt she ever will.
What happens if she just stops paying the monthly tenner?

If it's PAYG and using auto topup, she can cancel at anytime without penalty.
Auto top-up makes sure you never run out of credit by automatically topping up with money from your credit or debit card.
Step 1: Sign in to My O2 to set up your auto top-up.
Step 2: Choose the amount and if you want to get topped up on a certain day/date or when your balance gets low.
Step 3: We'll then top you up automatically. You can change or cancel whenever you like.
If she is on the old Classic tariff, then she simply needs to stop her top ups.

As it is a rolling contract you need to cancel or they will keep billing her and eventually sell any debt on to a collection agency.
Is the account in her name or your name?
The account holder needs to call O2 and end the contract or it can be done via text message

No, there's nothing automatic about it. For some reason there's £4 sitting there and another £10 has to be added by 18th of the month. No option to top up anything less though.
Anyway, by the sounds of it, she could just stop topping up, let the number die and be done with it.

If she stops topping up and stops using the phone, it will disconnect after 6 months automatically.
There is no need to top up if there's no intention to use it.

Ah ok. I'm starting to understand now.
Would it still accept incoming calls during that 6 months of fallow time?
And what if she topped it up after 3 months of ignoring it?

If she tops up after months she will get further allowances for a month
