Getting a new plan after my contract ends

So my contract is up soon and I'm hoping to get the new Galaxy S8, however, the deals when upgrading through o2 (or any 3rd party seller) aren't great. Looking around, I've seen that new plans seem to be a better deal, so if I get a new plan through a 3rd party seller rather than upgrading, can I still just transfer my number over to the new sim when it arrives? 

 

I'm assuming my contract will run out, I'll get a new one and be able to transfer my number over when the new sim arrives?

Yes, you can do that but it will mean you have both the old and new contract for a month (or at least have to pay the final month of old contract).
