So I've done the form to change my number. Basically bring my PAYG giff gaff number to my O2 contract. My signal has gone off my giff gaff SIM now so does that mean it's in the process as my O2 contract still has the number on the SIM that it came with

Yes the process has started.

Keep rebooting your phone with O2 sim until it gets a signal which usually takes a couple of hours but can be up to 24 hours.

My O2 SIM card still has the contract number that it came with and signal is still on aswell

It will turn off before it ports your number.

Just keep rebooting.
