Yes you do this by going to My O2 and Bring in Products

What about if the number is not currently in O2. Basically I have a new O2 contract and phone. I have brought in one number from a different provider and wonder if I can bring in another number from another provider to the same phone, thus saving me the need to have two phones?

It is possible if you ave a dual sim phone.

Many phones these days have that ability.

What phone do you currently have?

The get an eSim you need to ask O2 Guide: Coronavirus Community Help and Support or pop into your local O2 store.
