Apple Watch Ultra Disconnecting from Cellular Data and only connects again if watch is restarted

Hi, I’m hoping you can also help me please. I’m having the same issue with a brand new Ultra 2 with cellular connection issues. It my first Apple Watch I’ve had with cellular plan. Watch says connected however I can not retrieve Mail or weather.
