Can I change the bill date via the app, if so how because I’ve searched everything and still haven’t found a way. Secondly how am I able to see what add ons I’m paying for aswell as my contract.

No you can't change any billing details in the app with relation to dates so you need to call customer services, on 202 from your o2 phone.
On the app scroll down to the bottom and look for My Extra's and View My Bolt-ons
