When doing what?
Have you tries a general reset (home + power key) ?

New 6s...get it exchanged either via o2 or Apple.

Yes in fairness a brand new phone should not be doing that. It must be less than two weeks old. Get it exchanged asap. Do not accept an offer to 'send it for repair'

No, nothing I've heard of.

I'm guessing a faulty phone or an app causing the issue. I would look at any recent downloads coinciding with the time the problem arose.

If its only one app where you are seeing this issue, then it could either be that the app hasn't been updated properly for iOS 9 or that the problem is from a recently installed app. So have a look and see if you have recently installed an app around the time you first started seeing the freezing.

I had an app that (although wasn't freezing) it would quit immediately after launching it. When I looked in the updates in the App Store, there was an update for it which fixed the issue.

If you are seeing the freezing pretty much throughout, then I would go to the Apple Store and have them replace it. I have the 6s Plus and I've experienced no freezing with it, it runs very smoothly.
