I’ve upgraded my Dad’s iPhone (my account - I pay). We’ve also got a new sim. Do we put the new sim in the new phone before syncing them and will the new sim have his old number? Thank you

You can use the old sim.

The new sim is for 5g so you need to do a sim swap to use it Guide: Sim Swap: a mini guide 2017 update

I'd set it up with the old sim first.
