I have just bought a new Samsung Galaxy A25 5G phone from John Lewis (not O2) and have inserted the SIM from my old phone which is quite an old ex-Virgin SIM so I assume it is a 4G SIM.
2 questions: 1. How can I tell if it's a 4G SIM 2. If it is, how do I get a 5G SIM?

Yes, you need an O2 5g sim, you also need to be in a 5g area O2 Service Status
Pop into your local O2 store with photo ID to get one and avoid being without a signal whilst O2 deliver you one.
