I have seen this offer on hotukdeals,Disney+ Plus free for 3 months on O2 - text "DISNEY3" to 21500 (Possibly Contract only specific). I just want to know if it is legit. How would I add it to my O2 account. I had Disney Plus before and if I add it on to my account, would I be charged again.

It's a targeted offer so it only applies to you if you receive the text or have it offered through O2 Priority app.

It is legit and I have used it myself. There are no charges for the first 3 months when redeeming and you can cancel after the free period Guide: Adding and removing O2 Extras

You may be charged again.. and it seems a bit hit and miss, if I was you I wouldn't risk it as, and it looks like a targeted promotion.

im getting this text but when I text the number it says im not eligible. I called O2 and they said they never heard of it!

You need to text DISNEY3 to 21500, not just DISNEY.
