My account is actually for a phone that my son has been using for years and years. I want to move the account over to his name and his billing, without changing the phone number.

Your son will need to obtain a new contract in his name and pass the credit check.
You can then migrate the number across. However, there will be fees unless the contract minimum term has been reached.

Alternatively, you can just change the account the bill is paid from in your MyO2 under bills >payment cards.
