I have fully paid monthly device plan. And now I wish to terminate the contract in order to do a new contract with sim only. What do I have to do?

You don't need to cancel to upgrade to a sim only.
Just follow the upgrade path in your MyO2 and choose sim only http://www.o2.co.uk/myo2
