pay monthly after phone paid off

I got a sim with my new phone but I;ve upgraded so swapped over my old sim. I want to use the new sim in my S8 but there doesn't seem to be a phone number for sim and showing on S8 as unknown number .

You need to do a sim swap starting from your old sim. All instructions are here
