I have old iphone on a longstanding sim only contract and I want to upgrade to an iphone12 still on the o2 network, but via a third party provider who can offer a better phone/data/airtime deal than O2 themselves. Will I still have to pay a charge for early cancellation of the sim only contract even though I'm staying with O2?

There will be no charges for upgrading as long as you have reached your minimum contract term, which it sounds like you have.
