i want to add a pay monthly watch to my bill but it is saying i need to connect it to my phone number? does this mean i could not pair the watch with another number?

Yes, if you buy the watch from o2  it is tied to your o2 number , and contract. 

If you dont want to do this, then Apple offers Finance deals as do the likes of John Lewis and Very, then the watch isn't locked to your o2 number
