I've just ordered a new sim only deal and its unlimited data when will that kick in as I've not needed to get a new sim just using my old 1

You will get an email confirming when the change will happen.

Usually within 24 to 48 hours.

When I changed my sim only tariff the change happened almost immediately. Easy to check in My O2.
