I ordered a new SIM only for my daughter yesterday. I have had the email confirming the order, but when I go into my account, which I set up as part of the process, it says I have no order associated with my account. Is this just a timing issue because the SIM hasn’t be delivered yet or should my account be showing an order at this stage?

You will see it in your account when you get an email or text to say it's out for delivery. You can then track it. https://www.o2.co.uk/help/pay-monthly/how-to-track-your-order
NB: With a sim, you don't always get notification, its on its way. My last one just arrived.
Once it's been delivered it will then show in my orders in My O2.
