If I take out a 3gb contract via mobiles.co.uk, can I upgrade the data to 5gb? How much will it be?

You will be able to increase your tariff in your myo2 once everything is set up but the price will vary by tariff. If you look at the current 5gb airtime tariff price for O2 it should give you an idea of the price difference.
I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Currently using:
Pixel 7a (O2 & Lyca), One Plus 6 (Sfr), iPhone 12 Pro Max (Vodafone)

Thanks for the reply. I haven't decided yet but the current offer via mobiles is £240 up front and then £23 per month so quite a good deal. Will I have to pay the difference betwen that and the current 5gb O2 tariff to upgrade?

No, you'll just pay the difference between the 3gb and 5gb tariffs.
