Probably a dumb question but, if I upgrade to a new phone, can I just use my old sim so I keep all my contacts?

As long as your sim fits the new phone, yes.

If not, just backup your contacts to Google etc.

Always back up your contacts to Google, if you have a problem with the sim you will lose your contacts.

I'm honestly surprised there not on Google or some other cloud anyway these days.
No modern phones save to sim card anymore.
