All the device plans come with monthly rolling airtime plans.
Will it be possible to upgrade or change tariff of the Airtime plan before I pay off the device?
Wondering since it’s a monthly rolling plan and doesn’t seem to have minimum term.

As you are asking about monthly contracts....
The info on custom plans is here https://www.o2.co.uk/custom-plans
The airtime plans are rolling and can be flexed once every month, however, they are tied to your device plan for two years, so you cannot cancel the airtime plan unless you pay off the device plan first.
After two years, the device and airtime are delinked, so you can cancel the airtime and continue paying the device if you wish and have taken the device plan over a three year period.

Yes, wasn’t planning to cancel just upgrade/migrate to different tariff. But from the link it looks like I can flex once a month only to the plans available with the device which unfortunately are not so great value for money compared to standalone sim only plans 😞

You can only do that after two years or if you pay off the device plan first.
