Hello,
I have joined O2 from orange on sunday using a PAC code from orange to transfer my number, What I would like to know is the temporary number sim they gave me which I am using until my own number is active, Do they over write the sim they gave me or will they send me a new sim?

This will have no affect on your ported number so don't worry

The sim will always hold the original number unless you overwrite it yourself.
You need an iPhone to do this though as it's not possible with Android.
Older Blackberry's and Nokia's can also be used to do it.

O2 don't transmit numbers to sim cards.
If you want to see your number shown under "My Number" you need to write it to the sim yourself by putting the sim in an iPhone and editing the My Number field in settings.
