Call up O2, Request your PAC code, "which is only valid for 30 days", Once you have retrieved it you can go to the giffgaff app and follow the PAC transfer, or use the links provided.
As soon as you transfer the number over, The O2 account will disconnect and they will send you a final bill if there is one.

Procedure is exactly the same and if you want to come back you just request your PAC from giffgaff's automated system and give it to O2.
There are no call centres with giffgaff, assistance is via a forum or for account related stuff you have to send a message off to an agent who reply within 24 hours usually.
btw, if you pick up a giffgaff SIM you won't find a number on it, you have to activate it via the site by topping up and it can up to 24 hours for a number to appear, you'll need to wait for this to happen before you can give them your PAC.
