Setup new iPhone but overseas

Hi, can anyone advise me - can I set up a new iPhone if I’m not in the UK currently? I’m due for an upgrade, will go for iPhone 8 or higher but not sure if it’s worth getting a new phone if I can’t set it up. Currently on an iPhone 6s on v 14.4.2 with a 3G sim. Have wifi access. 

I’m in Cape Town currently and due for an upgrade, plus need an ‘old’ phone w a local sim.

 My husband is in the Uk currently and flying out here next week..

You can set it up but would be advised to use your old sim until you get back to the UK
