Does anyone know where you can see where you can see all call & data charges which I am using on my Pay & Go? I know you can see the Tariff's but I want to know what I am using all my balance on!

No, that's why it's called 'Pay' and Go. If you're on a monthly contract those services are provided because you've paid up front for them.
At a guess, I'd say you're charges are high because you have Mobile Data permanently switched on, and your apps are updating in the background. If you do a search there are many threads which will tell you how to stop this, depending on what phone you have, i.e. Android or iPhone.

What phone do you have?
On some phones it is possible to check what apps are using up the data and if you have mobile data switched on then this will be the cause of your problem.
What tariff are you on? How much data allowance do you get per month?

Some networks like Virgin provide this but O2 don't.
