How to get pac here which is valid for 30 days https://community.o2.co.uk/t5/How-to-Guides/How-to-get-your-PAC-2017-Update/ba-p/1052278
No need for new numbers as your old number will continue on O2 until you use the pac with new network.
I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Currently using:
Pixel 7a (O2 & Lyca), One Plus 6 (Sfr), iPhone 12 Pro Max (Vodafone)

Check the other networks for coverage as you don't seem to have done this given you don't know who you are going to. No good deciding if you can't get good coverage on your decided option.

Also, you may need to get your phone unlocked if you are keeping it in order for it to accept another network sim
