Right, please bear with me as this is rather convoluted
I have a year left on my current contract, and wish to get the new Galaxy S21. As there is still quite a bit to pay if I want to upgrade, I have 2 options as I see it:
1) Take out a new contract.
If I do that, can I swap the 2 SIMs around so that I have the existing number on the new phone?
2) Get one from Sky (as it is a bit cheaper).
Ask for a PAC code to transfer my number and get a new number for the current phone. Is that even possible?

1 - Yes
2 - No as your current contract will end when you port your number and a final bill will be generated with what you owe.

You can't swap numbers between contracts
Porting your number will end your present contract and charges will need to be paid
Either way you would end up paying off your contract @DoctorJellybean

You could however just swap the sims between phones
