Just had my new iPhone. If I just move my old sim into my new handset will it pull through all emails, contacts, notes, apps etc?

Yes use your old sim. When you sign in and set up your phone you can restore from back up if you backed up your previous phone.

You might want to do that first if you had an iphone previously @Skh 

Back up iPhone

1. Go to Settings > [your name] > iCloud > iCloud Backup.
2. Turn on iCloud Backup. iCloud automatically backs up your iPhone daily when iPhone is connected to power, locked, and on Wi-Fi.
3. To perform a manual backup, tap Back Up Now.

No, I sim can only hold contacts and it depends if you have saved your contacts to the sim,google, the device etc. What is your old device AND  I can help you get everything transferred?
