I have requested to change my surname via the BusinessTOO@o2.com and i'm wondering how long does it take for an email to be picked up?

Sending it via email should be fine and it should be picked up within 24 hours. Hopefully you should get some sort of acknowledgement.

I emailed it off to the email address provided on the form you send off with the certificate. I just wondered the turn around time

Did you not get an automated receipt email?
Check your spam folders too as I've had some o2 emails go into my spam folder.
