I accidentally out my cellphone through the washing machine and tumble drier this morning and it seems to have lost all my stored numbers on the SIM card.

Unless you have a backup either to iCloud or Google, depending on type of phone, they will be lost forever.

I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Very unusual for numbers to be stored on the SIM these days

This is not O2 and we are all customers here similar to yourself and cannot answer account type queries.

Would be backed up to a cloud service if they were on the phone so not lost, but given the OP states sim contacts, we can only go by what info we have.
