I just clicked from uswitch to an £8.99 contract, but the purchase screen is saying my bill will be £10.79 AND will increase from April by £1.80
This isn't correct.
The first month should be £8.99 and from April £10.79 ( which is a ridiculous 20% increase, thanks ofcom)

But, as per the screen I've shared, it says my initial monthly cost is £10.79 with the Maltese cross indicating it'll go up £1.80 in April.

It looks like uSwitch have sent through the incorrect data to o2, and the only people who can sort it are uSwitch
So that is where I would start, as its the offer made through them..

Sorry, the way I read it was that the April price was £10.79 which would include the £1.80 increase?
As said above, best to call the sales team
