I originally joined O2 on a comparison site SIM only deal at £8/month. After a couple of price hikes it will be going up from £10.50 to £13 in April. I use little in the way of calls, texts or data so £13 is looking rather expensive for what I use. I can see a better deal with O2 on a comparison site but it is for new customers only. So, if I were to leave O2 and port my number to an alternative provider on a 1 month rolling contract, how long would I have to wait to re-join O2 as a 'new' customer and port my number back in?

If you are going to do that then once you have left and are on the new network, take out a new contract and PAC back in at the end of the month
A few people have done that and it has worked.
As a low usage user why not consider the likes of giffgaff, Tesco and the like and avoid annual price rises.
My MNVO SIM is still the same price as when I took it out in 2019

Where I live there is barely a signal on any of the networks so I rely on wifi calling and support for that on MVNOs can be sketchy. I've also used the O2 priority tickets feature more than a few times so for those reasons I'd prefer to be direct with O2, but not at any cost.

So giffgaff would be ideal as they have the full range of network services you need, but without Priority, and to be honest, I would rather save a few quid than stay on a network just for tickets @elverdiblanco
Also be very aware there is no guarantee you would pass o2's credit and affordability checks if you leave and decide to come back..
