I have a Samsung Galaxy S21 phone and I'm wanting to purchase a Galaxy watch4.. However, when I go to check out it asks me if I want to keep my number or get a new one. When I choose my number it wants me to pay £500+.. Is there a way to get the watch on my monthly bill without paying that amount upfront?

Choose the new number option. As otherwise you will be upgrading your current contract.
If o2 need a deposit then you will need to pay the deposit, and there is no way round it.

If I choose the new number does that mean I won't be able to connect it to my current contacts on the number I have now?

You will be able to as you will be charged the £5 per month fee, bare in mind it can only be connected to one of your contracts, and it only needs a new number for Data.
