is it possible to have an O2 Esim on a pay monthly (12month) sim only deal?

Yes but its cheaper through https://esim.net only £18 per month, but no premium texts or calls, but unlimited data, text and calls, and WiFi Calling and 5G from the get go. 

If you want to go direct to o2 then look on the shop pages at sim only deals
