How can I transfer my o2 e-sim from my iPhone 11 Pro Max to iPhone 12 pro max?

You need to request a new esim pack from O2 Guide: Coronavirus Community Help and Support 

then do a sim swap Guide: Sim Swap: a mini guide 2017 update

Sadly not. The phone will recognise the Sim if you do a transfer but won’t be able to activate it. You’ll need a new ESIM pack. Plus you’ll want a 5G one anyway
