I’ve recently upgraded my phone and have not chosen the extra yet as none really took my fancy. Can I add the Disney extra for the £2 off a month if I have already created and account?

Yes you can add it after but best to do it on the PC rather than the app.

I think I have done it. When I click on subscription is says o2 when previously it come up with payment. Is this right?

I've selected the Disney plus downloaded the app but when I try to set up it wants me to pay why can't I use the O2 offer??

You need to use the offer in your account with o2 and then use a voucher code as payment.
