Dropping to "No service" is not apn related but signal related.
How many bars are displays for signal strength?
Try a sim clean as above.
And check what your signal should be like using the status checker http://status.o2.co.uk this will also tell you if there are any local issues.
In the location this is happening in, what are the bars with 3g enabled compared to 2g only this may indicate a local cell fault on 2g if 3g is stronger

And or toggle airplane mode on and off.
Sometimes a soft reset can help.
Hold the Top Button and Home Button until the Apple Logo appears, and then let go of both. Your iPhone will reset.
Also check your service status to see what your local masts are doing.

Remove your sim and clean it with a clean dry cloth.
And or have your SIM card replaced by visiting an O2 shop whee they will perform the sim swap for you. Takes approx 24 hours for the signal to fully settle.
Or have one posted to you and perform the swap yourself.
