Everyone quick question if you are on a Sim only with 12GB data and you change m price plan to unlimited are you able to change the plan back down again to anything of your choice after 30 days I’m sure I saw somewhere that you can change your plan once a month up or down as they’re now flexible?

Look in the tariff details of your MyO2 and it will show you available tariffs.

Cheers will work out if need too as I get 12GB for £8 from uswitch and if I change away I’m guessing I can’t change back to this deal

If it's discounted you won't be able to get the discount back but you should be able to get the tariff back, albeit at a different price.
