Changing my sim to an esim

I currently have a pay-monthly sim-only deal for which I have a physical sim. I will soon be buying a new mobile that requires an esim - am I able to transfer my current o2 sim to an esim?

Yes you can

Easiest way is to call in the O2 store with photo ID and they will swap it over

If you are on the new billing system it can be done via My O2
