I have just ordered an iPad Pro 12.9 on contract but it comes with 1GB airtime for £13 which I think is ridiculous so I was wondering if I could keep paying the iPad off and cancel the airtime as it is useless to me anyway

No sorry.

You can only cancel the airtime once the device plan has been paid.
