I am looking to upgrade to an iPhone X using the Buyout scheme however I don't own the phone that is required to upgrade (iPhone 7+) and was going to use my current Huawei P20 pro instead, can this be done?

Are you talking about the Upgrade on us scheme? https://www.o2.co.uk/on-us
If so you won't be eligible I'm afraid. You need to already have an iPhone to do that..
However you are able to upgrade if currently on Refresh if you meet the requirements. https://community.o2.co.uk/t5/How-to-Guides/How-does-O2-Refresh-work/ba-p/1014093
