At one point the watch had a data connection seperate to the phone.
However it seems the watch has lost access to its eSim. If I don't have my phone near the watch it has no connection at all.
Do I need to do something to resync the eSim back to my plan?

Follow the setup routine in the watch app to resync your data package.
