@daydinho Can you advise if at this point your watch and phone are both within range of each other (ie connected via bluetooth)? as if this is the case your watch will pick up the same status you apply to your phone (ie DND, sleep, etc).
For the watch to connect to cell service you need to be out of range of your iPhone. But be aware you'll only be able to make / receive calls over cell and receive iMessage if your iPhone is not on (or on airplane mode), as your phone acts as a relay for things like standard SMS
