I need to view all activity with a certain number on one of bills during the last 3 weeks, but I can’t view it anywhere, can any one help ?

You'll have to wait until the bill is generated to see the called-numbers detail in your MyO2, @Joe2020 - assuming you cannot determine what you need from the call history on the phone itself.
MyO2 Web version is usually better at letting you download the pdf version of your bill, when issued by O2, than the App. Open the bill in your PDF viewer and scroll past the first couple of pages until you get to the detail, all outgoing calls will be there. Incoming calls will need to be checked on the phone's calls app itself.
