@Kennybloonfield If you're already an O2 customer you need to swap your old sim for your new 5G one: SIM Swap: a mini guide (incl eSim) - O2 Community
If you're a new customer you will need to call O2 and ask them to activate the sim for you, and, as @Cleoriff has said, you need to be in an area where 5G is up and running.

As wellas a 5G phone, you need a 5G sim and be in a 5G area.
