I have a Pay monthly phone and my mum has recently got a pay monthly phone.  As she doesn't have a credit history, I have put her on my 02 Account but it means that I pay for both my own and my mum's contract. How do I put her bank details in so she pays for her own contract and I go back to paying mine? Or can I separate them completely and have 2 separate accounts?

You will need to call CS on 202 and have them set up the payments from a different account for your Mum's contract.
CS may also be able to split them into individual log in's for you too but it is easier to join accounts rather than disconnecting them.
I have no affiliation whatsoever with O2 or any subsidiary companies. Comments posted are entirely of my own opinion. This is not Customer Service so we are unable to help with account specific issues.

Much as MI5 says, but your mum may have to pass a credit check for her own account.

it might be easier for you to set up a direct debit from her into your bank account. That way she would be paying for it...but via you...?

(I post this as I see you have added that your mum failed the initial credit check)
