my tarrif ran out today so i topped up as its monthly but it didn’t go to my tarrif it went to my balance, how do i change it?

You can't - the money will sit there until your next bill (if it is not due in the next 7 days!) is issued and will be used to pay that (Contract).

Sounds like you are on a PAYG rolling plan.
If so, your renewals come from the card you registered with and any manual top ups just add credit and cannot be used to renew.
To use your credit, you need to switch to a big bundle.
