What happened to the old sim cards where you just top it up when you want to and it costs 20p a text, 35p a minute or whatever? 

Just topped up £20 and it automatically took £15 for a silly bundle. How do I switch this bundle off and have a standard sim how they used to be? Non of this silly modern rubbish.

The old PAYG was called Classic. O2 no longer provide this tariff. Instead they have Big Bundles. https://www.o2.co.uk/help/pay-as-you-go/big-bundles 

If you want the Classic tariff you need to get a sim card from Tesco or Giffgaff who run on the O2 network. Best of luck.
